  • The next day you can easily prepare a delicious casserole from the leftovers. Simply put the remaining ingredients into a casserole dish, bake with cheese in the oven and enjoy with the raclette sauces.
  • Often you still have something from the raclette evening for days. Because not only the remaining side dishes must be eaten, the entire dwelling smells of fat and cheese. You should make sure in advance that all textiles are removed from the room before the grill is heated. This prevents the odours from settling. The doors should also be closed to prevent the smell from spreading. You should also ventilate well - even after barbecuing.
  • Offer guests coffee after dinner. Coffee removes odours and a pot that has passed through serves as an ideal odour killer. Or walk around the house with a tub of hot water and cinnamon. The stench disappears and a pleasant smell spreads. Votive candles, which displace odours, or oranges with cloves, also achieve the desired effect.
  • It is best to rinse the pans and grill plate immediately after eating or soak them directly to avoid dried cheese residues. This makes cleaning in the evening or the next morning a lot easier.

In the run-up to the test, we defined practical requirements and the following test criteria:

In order to evaluate these criteria, we have defined several tests for the Raclettes. In these tests, several foods are prepared on all machines. Consisting of: 250 g young Gouda, 150 g chicken meat, 1 can corn, 250 g mushrooms, 250 g boiled potatoes, 250 g feta. First, the scope of delivery and functions of the equipment are checked. The meat is placed on the heating surface and the remaining ingredients distributed on the pans. During the test runs, the time needed to heat up the devices and how much electricity they consume are checked.

It is also assessed how long it takes for the food to be fit for consumption and whether it adheres to the hot surface. In addition, the application is also explicitly tested for safety. A thermal imaging camera is used to determine whether there is a potential risk of burns to the device. Finally, the devices are cleaned and checked whether the individual parts are dishwasher-safe.

In order to rule out errors and to ensure the stress of everyday use, each test takes place in several rounds.

The test criteria are given percentages depending on their importance. The final score is then objectively calculated from the test criteria using an algorithm.

Product selection

The raclette grill is mostly rectangular, has a grill plate and the pans, which of course should not be missing. Thanks to the integrated heating spiral, which is located above the pans, the appliance heats up within a very short time. The food is placed in the pans. With high-quality devices, these are non-stick coated. This means that the food burns less and the components can be cleaned more easily. The appliances draw their energy from electricity. High-quality devices are equipped with at least one level into which the pans are inserted. More powerful devices enable output of 1500 watts.

Raclette grills can be divided into the following types:

  • Raclette grill with a metal plate for roasting
  • Raclette with hot stone
  • Combination of raclette oven and fondue to conjure up a delicious cheese sauce on top of that
  • Swiss Raclette Oven

How does a raclette work?

Depending on the model selected, the equipment and the method of preparation are slightly different. At the heart of each raclette are the pans, which can be used to prepare a wide variety of dishes. They are heated with top heat by a heating spiral. Usually there are eight.

There are also raclettes with a reversible plate, for example to make crêpes.

The pans can be filled with a wide variety of foods, for example:

  • Raclette cheese
  • Potatoes, bread or baguette
  • Various vegetables such as mushrooms and tomatoes
  • Pickled gherkins
  • Meat in all possible variations, such as beef, pork or chicken strips
  • Fish, like smoked salmon
  • Seafood, such as prawns
  • Refinements with fresh herbs and spices to taste
  • Various fruits, such as bananas, pineapples, pears, cranberries, peaches or in winter tasty baked apple

With a raclette, you can have a variety of meals in a small circle as well as in a large group. It is a lot of fun to fill the pans with all kinds of ingredients, especially when sitting together in a convivial atmosphere, and cheese is a must. It is the heart of the Raclette. Almost all types are suitable, but the cheese should melt particularly well. Cheeses that are too soft burn easily and acquire a bitter aroma. Ideal is original raclette cheese or other cheeses, such as:

  • Mozzarella
  • Feta
  • Parmesan
  • Gouda
  • Tilsiter
  • Camembert
  • Gorgonzola

If the cheese throws bubbles and is browned, it is ready. In some machines, it is hung up. This allows the enamel to drip into the pan underneath. Traditionalists also use potatoes: The hot potatoes are cut into thin slices, salted and peppered, this is refined with vegetables, for example with:

  • Leek
  • Onions
  • Tomatoes
  • Corn
  • Mushrooms
  • Paprika
  • Courgette

A slice of raclette cheese is placed on top. Thus also vegetarians and vegans can enjoy it. There is cheese both in the vegetarian and vegan variant. Just as suitable are marinated tofu, seitan or tempeh. The pieces of meat are sautéed briefly on the upper plate or baked in the frying pans.

Children love toast Hawaii: For this, some pineapple pieces and small sliced cooked ham are baked in a pan with a cheese cover. This is then served on toasted white bread.

Sweets can also be prepared wonderfully with the raclette: Small slices of fruit can be combined with nuts and chocolate cream, or Camembert goes well with apple. Both are a very tasty topping.

Ultimately, there are no limits to creativity. You can fill the pans with many other culinary highlights as you wish. Anything that tastes good is allowed. At a party, different ingredients are often served in bowls and everyone can fill their pans as they wish.

Raclette with natural stone and metal plate

Covering the heating spiral is an important component of many appliances. As it also heats up, it can be used as a grill plate. The support consists of a hot stone or is coated. You can grill all kinds of ingredients on it, such as meat, sausages, and vegetables.

The raclette appliance is also available as a combination model, so it offers several preparation options. These have a grill plate, pans, and various attachments. Even fried eggs and some pancakes or crêpes can be prepared with these appliances. As a rule, the grill plate has a collecting channel so that liquid does not run over the edge. Modern appliances with different surfaces are available.

Preparing the food is child's play: while meat can be grilled on the upper grill stone, for example, the various ingredients are baked in the pans. The surface on which the raclette machine stands should be even and non-slip. The plug is then plugged into the socket. Depending upon model either still another existing on/off switch must be operated or the Raclette equipment begins automatically to heat itself. Depending upon food often still another suitable heating stage can be selected if at the equipment a temperature regulator is.

While meat can be grilled on the upper grill stone for example, in the pans the most diverse ingredients are gratinated.

You should wait a few minutes until the filled pans can be placed in the trays or the grill surface can be used. The ingredients should not stick out beyond the edge of the pans.

Solid vegetables, such as broccoli or cauliflower, should be blanched firm to the bite before being placed in the pans. Dips and sauces, such as tzatziki or aioli, should not be missing with raclette. As with all cheese dishes, a glass of wine goes best with a raclette.

Various materials

Some models are made of stainless steel components, while others use less steel and are mainly made of plastic. Raclette devices made of plastic are not so well suited as they do not withstand heat for long. The pans are always made of metal.

Non-stick coating

The pans should have a non-stick coating so that they are easy to clean and the contents do not burn during preparation. The food can therefore be removed without leaving any residue.

It is best to rinse or soak the pans and grill plate immediately after eating to avoid dried cheese residues. This makes cleaning in the evening or the next morning much easier.

How many pans can there be?

On average, the units can accommodate eight pans, but in some cases only two to four. Up to 16 can be used with XXL versions.

It is recommended to purchase additional pans. Then everyone can prepare their meal while the supply is already in the raclette. With more participants, a smooth change can also take place with additional pans.


The spatulas are usually included with each unit. This makes it easy to lift the food out of the pans. There are spatulas made of plastic or wood. Wood has the disadvantage that the food leftovers are often difficult to remove. In addition, they have to be replaced regularly for hygienic reasons, which causes higher costs.

Grill plate

The raclette oven should also have a grill area in order to extend the use and preparation possibilities. One of the advantages of a natural stone plate is that it is easier to clean and the food can be prepared with little or no oil or fat. In addition, the natural taste of the grilled food is preserved. Granite or other high-quality materials also distribute the heat particularly quickly and store it well. The barbecue food hardly sticks to it.

The coating of the grill plate should not consist of PTFE, since the non-stick coating known also as Teflon causes environmental poisons in the production and disposal as well as with strong heat. Better is a coating on ceramic basis, for example under the names Silit, Green Life, CeraProtect or Thermolon.

Make sure that there is a grease trap groove at the edge of the stone.


The devices usually have a temperature controller for adjusting the heat. Simple models only have an on/off switch. With a temperature controller you can set the optimal temperature for the different dishes.


The power output refers to the length of the heating coil so that the wattage is compared with the number of pans. If, for example, a raclette with four pans provides 600 watts of power, this corresponds to a raclette with 1200 watts and eight pans. In principle applies: The higher the Watt number is, the faster also the cheese melted. For larger devices with eight pans approximately 1,500 Watts are appropriate, 800 with four and 400 with two.

Raclette is nowadays a typical banquet, whereas in the past it was made on an open fire: the typical Valais raclette. For this, full-fat cheese was used, mostly the "Gommer Käse", which was placed next to the fire. As a result, it slowly began to melt. The topmost melted layer was always scraped onto a plate. Since the 1950s this type of preparation was no longer used. The Raclette oven was developed, which is a special table oven. It consists of a heating coil and a cheese holder. The cheese is placed in the holder under the heating coil. The upper, melted layer is still scraped onto a plate with a special raclette knife.

Today there is the modern raclette oven. The raclette has its origin in Switzerland. Here it still belongs to the national dish. The Swiss already enjoyed their melted "Bratchäs" very much in the Middle Ages. Here it concerns the precursor of the Raclettes, as we know it. The fondue, another delicious cheese dish, also comes from this region. In addition to the Swiss raclette, there are now many variations such as the raclette fondue. The devices from the 1970s have been improved by many different technical details.
