The attractively designed packaging of the WMF - Gourmet Noodle Machine indicated a high-quality product. It was very disappointing that the material of the pasta machine left strong marks on the dough at the beginning. Also the instruction manual does not contain all information, because it does not contain pictures, helpful tips or tricks. The production of the noodles is sufficiently explained, but additional information for cleaning, for example that they should be unscrewed, would have been helpful.
The WMF - Gourmet Noodle Machine is disassembled and packed in single cardboard boxes and additionally wrapped in plastic. The pasta machine is made of stainless steel and has a silver colour. When removing the machine, the pasta machine feels relatively stable and well made.
The cutting attachment is packed separately and must be attached to the pasta machine before use. Crank and screw clamp are also packed separately and must be inserted into the respective holders for use.
The manufacturer does not give any information about an additional guarantee.

The WMF - Gourmet Noodle Machine should first be cleaned with a kitchen towel according to the instructions for use. Then you often roll a small piece of your dough through the roller to clean it. When you are finished, dispose of the piece of dough. This is a very important procedure, even if it is described as optional in the instructions for use, as there were metal residues in the pasta dough after the first rolling operation.
At the beginning of the pasta production your dough must get a uniformity. To do this, set the roll thickness to 1 by turning the outer wheel. Attach the crank to the intended position, place the dough in the roller and start cranking. It is advisable to spread the dough on a board so that it does not compress and stick. Once your dough has passed through the roller, sprinkle it with flour on both sides and fold it in the middle. Repeat this 5-6 times to make your dough nice and even.
When you are done, raise the roller one step up to 2 and crank the dough through. You can dust it with flour from time to time to prevent it from sticking in the machine. This time do not fold the dough, but set the roller to level 3 and crank the dough through again. Repeat this until you have reached the desired dough thickness. The dough thickness 6 has proved to be optimal for ribbon noodles. Unfortunately, the Gourmet Noodle Machine has shown that the material leaves strong traces in the dough. During the first rolling operations there were so many splinters in the dough that it had to be disposed of.
As soon as there are no more metal residues in the dough, you can continue. In this case, the cutting attachment is used. You reposition the crank so that it is in the appropriate holder for ribbon noodles or spaghetti. Then put your dough into the cutting attachment from above and crank at the same time. It is advisable to place a bowl or a second board under the machine so that the pasta is collected directly. Once the dough has been cut and you have made the finished noodles, flour them and pluck them apart as thoroughly as possible so that they do not clump together. Then boil your pasta in salted water and serve with sauce. Enjoy your meal!
The noodles produced with the Gourmet Noodle Machine were ultimately of good quality. They were cleanly cut and had a good shape. It was a pity that during the initial rolling process metal residues could be seen in the dough. However, this improved significantly after a few rolling cycles and in the end there were no metal pieces left in the dough. One can therefore assume that this problem only arises during the first use. Our tip: Make a little more dough the first time to completely remove metal residues from the pasta machine.
Cleaning a pasta machine takes a lot of time. Under no circumstances should the machine be placed in the dishwasher or washed with water! It is recommended to use a brush or a wooden stick for cleaning. However, neither one nor the other is supplied. If you have neither of these at home, the rough cleaning also works with a kitchen towel, but you can't get rid of all the dough leftovers with it. It is advisable to unscrew the machine to clean it completely. The roller and the cutting inserts are held in place by tension clamps, which can only be removed by unscrewing the housing. A suitable screwdriver is not included. Also the combs on the cutting inserts are fixed with such a clamp. It is highly recommended to remove the combs in order to remove all dough residues. Since the cutting inserts are slightly lower than the stainless steel surface, the dough remains in the machine, which can only be removed by unscrewing them. Cleaning the machine is very time-consuming, but thorough cleaning is recommended, as the remaining dough hardens and clumps quickly, which could shorten the life of the machine and make it more difficult to use.
