The Rosenstein & Söhne - Noodle Machine NM-100 is a good noodle machine, with which you can make your own wonderful noodles. The instruction manual is written in detail and reader-oriented and makes the first steps with the machine a lot easier. It's a pity that during the first rolling operations minimal residues of the material could be found in the dough. Especially if the dough came too close to the edge, this led to grey splinters in the dough. However, as this only occurred at the beginning and minimally, the all-round result is satisfactory.
The Rosenstein & Söhne - Noodle Machine NM-100 is packed in a white, unmarked box. The elements are individually wrapped in bubble wrap to avoid transport damage. The pasta machine is made of stainless steel and is held in a silver tone. The handles are black. When removing the device, the pasta machine does not necessarily feel high-quality, but qualitatively solid.
The cutting attachment is packed separately, so the pasta machine must be assembled before use. Crank and table clamp are also packed separately and must be attached to the respective devices for use.
The manufacturer does not give any information about an additional guarantee.

The Noodle Machine NM-100 should first be cleaned with a dry cloth or brush to remove any dust residue. Then you repetitiously roll a small piece of your dough through the roller to clean it. When you have finished, dispose of the piece of dough.
At the beginning of pasta making, your dough must be uniform. To do this, set the roller thickness to 1 by pulling the wheel slightly outwards and then turning it. Attach the crank to the intended position, place the dough in the roller and start cranking. It is advisable to spread the dough on a board so that it does not compress and stick. Once your dough has passed through the roller, sprinkle it with flour on both sides and fold it in the middle. Repeat this 5-6 times to make your dough nice and even.
When you are finished, set the roller one step higher to 2 and crank the dough through it. You can dust it with flour from time to time to prevent it from sticking in the machine. This time do not fold the dough, but set the roller to level 3 and crank the dough through again. Repeat this until you have reached the desired dough thickness. Unfortunately the Noodle machine NM-100 showed residues of the material in the dough after the first rolling processes. These were small, silver splinters that occurred especially when the dough touched the edges of the pasta machine.
When you are satisfied with the thickness of your dough, you can start making the noodles using the cutting attachment. You can then reposition the crank so that it is in the appropriate holder for ribbon noodles or spaghetti. Then put your dough into the cutting attachment from above and crank at the same time. It is advisable to place a bowl or a second board under the machine so that the pasta is collected directly. Once the dough has been cut and you have made the finished noodles, flour them and pluck them apart as thoroughly as possible so that they do not clump together. Then boil your pasta in salted water and serve with sauce.
We have also tried the production of lasagna plates. You don't need the cutting attachment for this, you roll the dough to about level 7 or 8 and then cut it into plates, depending on the size of your casserole dish. The lasagna plates are then blanched in salt water for 2-3 minutes. Then you can start layering your lasagna and finish it in the oven. Enjoy your meal!
Making lasagne plates with the Gourmet Noodle Machine worked well and is definitely recommended. During the initial rolling process, metal residues were visible in the dough, but this improved significantly after a few rolls. So you can assume that this problem only occurs during the first use. Our tip: Make a little more dough the first time to completely remove metal residues from the pasta machine.
In general, cleaning a pasta machine takes a lot of time. The instructions for use contain many helpful tips for cleaning and storage. Under no circumstances should the machine be placed in the dishwasher or washed with water! If you produce lasagna plates and only use the roller, the cleaning is relatively quick and the dough residues can be easily wiped off with a kitchen towel. It has turned out that a thorough cleaning of the cutting attachments is only possible if the sides are unscrewed. Then you can remove the clamps, which are on tension to hold the combs, and remove dough residue from the coils. How to disassemble the device cannot be found in the instruction manual. It is also advisable to use a brush or a wooden stick for cleaning. Unfortunately, neither one nor the other is included. Thorough cleaning is recommended, as any remaining dough will harden quickly, become lumpy and thus shorten the life of the machine and make it more difficult to use it properly.
