In the run-up to the test, we defined practical requirements and established the following test criteria:

In order to be able to evaluate these criteria, we have defined several tests for the hot-air fryers. In these, all appliances must prepare 750 g of ribbed chips and 750 g of chicken wings. If appliances cannot absorb this amount, the maximum possible amount is used. First of all, the scope of delivery, functions and filling quantity of the appliances are checked. The first foods to be prepared are French fries in the deep fryers. Meanwhile, the required time is stopped. Then the fries are tasted and evaluated by test persons. Particular attention is paid to the crispness of the fries. The process is repeated with the chicken wings. The volume is measured in normal mode at 200 degrees without content. Finally, the appliances are cleaned and checked whether individual parts are dishwasher safe.

In order to exclude errors and to ensure that the test is not affected by everyday use, each test is carried out in several runs.

The test criteria are given percentages according to their importance. The final mark is finally calculated objectively from the test criteria using an algorithm.

Product selection

Our product selection is based on the observation of the current market. In addition to popular brand products, we also include insider tips in our selection. Criteria such as price and range of functions are an important factor for us. The test field is also determined by analysis and evaluation of customer reviews and external tests (e.g. Stiftung Warentest).

The devices are purchased anonymously or lent to us by the manufacturer. Dealers and manufacturers have no influence on the tests and our evaluation.

As soon as new relevant products come on the market, our test field will be expanded to include them. The new products undergo the same tests as already tested devices.

Stiftung Warentest, the German consumer watchdog, did not test hot-air deep fryers until January 2019, and the results are rather disappointing: of 13 appliances tested, five received the grade "satisfactory", four "sufficient" and another four even "poor".

There is no classic test winner, with a smooth 3.0, the Airfryer HD 9220 from Philips and PC-FR 1147 H from Proficook finish best. Three Tefal devices and De'Longhi's Multifry, all of which were rated 5.5, bring up the rear. The final score is made up of four criteria: Food preparation (55%), handling (30%), safety (10%) and environmental properties (5%).

In all 13 hot-air fryers, fries, chicken legs, vegetables and muffins were cooked according to the supplier's instructions. In most cases the fries were too soggy or dried out, only four appliances prepared good fries. The chicken thighs were often torn apart by the integrated stirring arm, looked unappetizing and were not crispy - no hot-air deep fryer could convince here. With the Tefal Genius, the thighs were not even heated to 70 degrees Celsius at the core, and pathogens can survive. Four products baked muffins well, the rest made burnt or cookie-like baked goods. For most types of preparation, it was found that the information provided by the supplier did not lead to the best results. Changes in temperature or cooking time gave a better result.

For handling, five experienced users tested the intuitive operation, filling and removing the food, monitoring the cooking process, reading the display, and cleaning and storing the equipment. In addition, operating instructions and the cooking instructions of the suppliers were evaluated.

In terms of safety, four hot-air fryers failed because the housing of the appliances became too hot. The De'Longhi had maximum temperatures of 97 degrees, the Tefal models up to 118 degrees, so there is a risk of burns.

For the environmental characteristics, the power consumption during cooking, off and standby was assessed. In standby mode, no appliance needed more than 0.5 watts. Operating noise and odours were also assessed.

None of the products tested by Stiftung Warentest passed our practice test. Only the manufacturers overlapped, so we also tested devices from Philips, Tefal, Princess and GOURMETmaxx. Whereby a hot air deep fryer from Philips is also our test winner.

Healthier frying with the hot air deep fryer

French fries, potato chips, pumpkin, garlic cloves, chicken nuggets and mushrooms: fried foods simply taste delicious. Conventional deep fryers work with oil, which is considered to be high in fat and unhealthy. The hot-air deep fryer is designed to prepare these delicacies in a way that is low in fat and preserves vitamins.

And there's more: the media is full of recipes for Sachertorte, muffins, cinnamon rolls, turkey strips and other dishes that you would not normally associate with a deep fryer. We have compiled the most important information for you: Read everything you need to know about the hot air fryer.

Hot air deep fat fryers are available in small versions for private households as well as in large versions for professional kitchens. At first glance, most appliances cannot be distinguished from conventional deep fat fryers, but their function is quite different. Because the new appliances do not require any fat at all. The deep fryer contains a fan and a ring hot plate, which circulate air inside the appliance.

Strictly speaking, the deep fryer does not deep-fry, at least not according to the definition of the Duden. Which says: deep-frying means that something is cooked floating in hot fat. The food is cooked in the hot-air deep fryer without oil by the hot air alone. This makes the appliance not only beneficial to health but also safer and more environmentally friendly than a conventional deep fryer.

You should think of the hot air deep fryer as a small convection oven. Hot air circulates in the deep fryer, cooking the food gently and quickly. Because the interior of the appliance is smaller than the oven, the deep fryer heats up faster and uses less energy. Everything you prepare in the hot-air oven can also be done in the hot-air deep fryer. Because the appliances use hot air instead of hot oil, you can do more than just deep-fry. The hot-air deep fryer can bake, grill and cook gently. However, not every appliance can do this: depending on the manufacturer and model, deep fryers have more or less functions.

But it is interesting to note that the deep fryer replaces several other kitchen appliances if you do not just fry in fat. Thanks to the small, compact interior, the hot-air deep fryer takes less time to heat up compared to the convection oven and does not use as much energy. It also benefits the electricity bill.

Conventional deep fat fryers work with hot oil. Their cooking chamber, usually a large bowl, is filled with fat or oil. The appliance heats up the oil and the food is cooked floating in hot oil or fat. Of course, you can also do this in a pan or a pot, but this splashes and involves some dangers. In the conventional deep fryer, this is a little safer because the food is let into the hot oil through a sieve and then the lid is closed. This prevents hot fat from escaping. Nevertheless, the appliances emit an intense odour and the oil vapours settle on all surfaces in the kitchen.

This is not the case with the hot air deep fryer. The appliance works only with hot air and does not use oil or grease. This means that the intensely smelling and rather penetrating vapours do not occur and no oil film is deposited on the kitchen furniture. The deep fryer is therefore firstly safer (no splashing hot fat), secondly odourless (no fat), thirdly cleaner and fourthly more environmentally friendly (especially with regard to cleaning agents). This is because the oil used has to be disposed of in the conventional deep fryer, there is no need for this. Since the deep fryer only works with hot air, it is resource-saving. Sharp cleaning agents for removing grease films are also not required. Another advantage: The deep fryer heats up quickly, so it uses less energy and saves time when preparing meals.

But there are also a few disadvantages. Fat is a flavour carrier. Food prepared in the hot-air deep fryer tastes slightly less intense, and the flavours of the food develop differently. This is not necessarily worse, but it is unusual for many people. Fats are also needed by the body to provide energy. Many fats contain essential fatty acids and are solvents for fat-soluble vitamins. The body can only absorb these vitamins from fruit and vegetables to a limited extent if there is not also some oil or fat in the digestive tract at the same time. Fats and oils are therefore among the basic nutrients that humans need. However, they are still not healthy, at least in large quantities. If food is prepared in a hot-air deep fryer, it should be provided with some oil.

For example, if you are deep-frying pumpkin slices, making French fries or frying sweet potatoes, you can drizzle some oil on the vegetables or spray them with an oil sprayer before putting them in the hot-air fryer. This also benefits the taste. This is a little more complex than preparing them in a conventional deep fryer but is much better for your health because of the lower amount of fat. By the way, deep-frozen, ready-made foods such as chicken nuggets, breaded fish pieces or French fries are often already treated with fat, so you can save yourself some work.

In general, most foods can be cooked in the hot air deep fryer. From various vegetables (except leafy vegetables), meat and fish to seafood, bread and cakes, everything can be cooked in hot air. Muffins, cupcakes, small cakes, even breads can be prepared in the convection oven. All this works the same way in the hot air deep fryer. However, the cooking chamber is smaller so that even smaller quantities can be cooked or baked in an environmentally friendly and energy-saving way. Puff pastry pockets, gratins and oven cheese, but also shredded and coarser pieces of meat can be cooked well. Vegetables retain most of their vitamins due to gentle preparation. Mushrooms, in particular, can be prepared well in the hot-air deep fryer, because they do not soak up all the fat.

In general, the hot air deep fryer can be used for everything that is normally done in a convection oven. And not only in the private sector: the technology is also available for catering businesses and meeting places as well as social institutions. However, the appliances there are somewhat larger than in the private sector, as larger quantities of the individual dishes are usually prepared.

All types of food that are to be cooked, baked or deep-fried are suitable for the hot-air deep fryer. Breaded pieces of vegetables and meat, French fries and the like are dusted or drizzled with a little oil and can then be prepared as in a conventional deep fryer. The taste is slightly different because the food has not been fried in oil and contains less fat overall. What is good for your health goes hand in hand with a somewhat unfamiliar taste. You can prepare these foods in the hot-air deep fryer:

  • Chicken: whole chickens, chicken parts like thighs, wings and nuggets
  • Turkey Breast
  • Schnitzel with and without breading
  • Meat in general, especially steak
  • Bratwurst
  • Fish in general, fish fillets, breaded fish and fish fingers
  • Potatoes, also as fried potatoes
  • All kinds of vegetables also mixed vegetables like ratatouille
  • Various desserts (for example red fruit jelly)
  • Pan dishes with vegetables, with meat or both
  • Stews including chilli con Carne
  • Bread and rolls, including cakes and pastries
  • Pizza, quiche and other similar dishes
  • Muffins and small cakes
  • Rice dishes such as risotto, but also couscous and other cereal dishes
  • Dishes with minced meat
  • Baked fruit

If in the household rather small quantities of individual foods are prepared in the oven, the hot air deep fryer can almost replace the oven. However, not everything can be prepared in the deep fryer: For example, if you love Japanese tempura, you must either pre-fry the vegetables and seafood wrapped in a cool, thin batter in oil or actually use a conventional deep fryer.

Since the deep fryer only works with hot air, the food is generally not as fatty as from the conventional deep fryer. Anyone who wants to eat a healthy and low-fat diet will, therefore, benefit from the appliance: even French fries, which are actually known as figure killers, can be prepared in the hot-air deep fryer in a low-fat and healthy way. Another health benefit is that cooking in hot air without fat preserves up to 30% more vitamins in the various vegetables that were lost when deep-frying in fat or oil. The food also retains its colour and tastes more natural in the hot air. The slightly oily taste that normally accompanies deep-fried food is missing.

In addition, the hot-air deep fryer does not produce acrylamides, which are considered carcinogenic. This is an advantage over the frying pan and conventional deep fryers. However, in the interest of fairness, it must be noted that many manufacturers have been offering so-called cold zone fryers, which heat the oil only to lower temperatures, for several years. Here, too, no acrylamides are produced during deep-frying.

First of all, you have to pay attention to the size. How many chips fit in the oven is important: if you are cooking for one or two people, the hot-air deep fryer can basically replace the oven. If you are catering for a whole family with several children and grandparents, most models are too small. Some manufacturers also offer multi-level deep fryers. So you can cook vegetables at the bottom of the deep fryer, prepare dessert on top and cook meat on the top level, for example. With such a model a transparent housing is useful, otherwise, you can't keep track of the individual dishes. Couples and small families get by with a capacity of 1.5 to 2 litres, larger deep fryers with up to 9 litres capacity are more suitable for larger families or for special occasions.

You should also make sure that you can take all parts out of the interior of the deep fryer for cleaning. Because even though you are cooking with hot air, the food contains fat. This comes into contact with the individual parts of the deep fryer, so they need to be cleaned. Ideally, the parts are dishwasher safe.

For many families, the purchase is also a question of cost. The hot-air deep fryer is available from discounters for well under 100 euros. However, the equipment is then also rather meagre, functions are missing, the models cannot do as much. Accessories is another point: Some manufacturers add some parts, others not. While the discounters quote double-digit prices, the models from Philips, De Longhi, Tafel, Klarstein and other suppliers of small electrical appliances cost considerably more. You have to reckon with 150 to 300 euros.

What functions should the deep fryer have? Of course, it should first be possible to set different temperatures. Whether the right programs are added to the temperature setting is a matter of taste. The warming function is nice, for example. Some appliances turn the contents of the cooking chamber on their own. In this case, you don't have to open the deep fryer all the time to shake or circulate chips and other food. When the deep fryer is opened, it loses temperature, which in turn is associated with higher electricity costs and uneven temperatures inside.

Fryers have been around for several hundred years in one form or another. This is because people began to cook their food in hot fat or oil at an early age. The advantage is that the oil not only reaches a high temperature but also maintains this temperature for longer. Conventional deep fryers maintain their temperature between 140 and 190 degrees Celsius. At these temperatures, aromatic toasting substances form on the food, developing a dry crust. This is the so-called Maillard reaction, which can also be observed when roasting and grilling marinated meat over a charcoal fire. This reaction requires fat or oil, which must have a high smoke point. Palm kernel fat, refined peanut oil and sunflower oil are suitable, but not all hydrogenated fats are suitable for frying and deep-frying.

In the industrial sector, vacuum fryers are also used, which further enhance the effect. This is because the water vapour from the food is superimposed on the hot oil or fat in the vacuum fryers and prevents oxygen from getting in. So the fat does not oxidize. If fat oxidizes, it spoils - the typical smell of old French fries fat is well known. The first deep fat fryers that work with fat were used in France as early as the end of the 1780s. First of all, fish dishes were prepared, followed shortly afterwards by vegetables. Despite this, the deep fryer has had a bad reputation in recent years because it produces food that is very rich in fat and not very healthy. Innovations such as the cold zone deep fryer from some manufacturers take health concerns into account and promise healthier food. The same goes for the hot-air deep fryer.

The first hot-air deep fryers were introduced a few years ago, but it is only since 2016 that you can get them in any better-assorted electrical appliance store and even at discounters from time to time. On the Internet, there is already some discussion about whether the hot-air deep fryer is the new Thermomix. There is no doubt that the appliances are in line with the trend, and manufacturers will probably add some new features in the next few years.
