The Rommelsbacher - BA 550 Bread maker is a very handy and intuitive operated device, which bakes a very good bread with many different programs. The timer and memory function are also practical, as well as the box for extras. The machine is reliable and bakes reliably, kneads and lets the dough rest. The only disadvantages are that the appliance is not lit from the inside and that the dough hook is difficult to remove. The plastic smell, which is noticeable at the beginning, disappears once the appliance has been heated up according to the instructions.

Handling and function

During unpacking, a distinct plastic smell is noticeable. The manufacturer recommends running through the baking program once. This takes 10 minutes and heats up the appliance. This has produced noticeable smoke that has escaped from the appliance and has a chemical smell. Afterwards, the smell is clearly reduced.

The bread maker is the smallest of the test with a filling capacity of approx. 1.8 litres. It can be used to make breads between 700 g and 900 g. The baking mould is easy to fill and can be inserted into the automatic bread maker by turning it and it can also be removed easily.

The control panel is easy to understand and intuitive to use. On the control panel, the program button can be used to set one of the 13 programs, which can be found in the instructions or on the enclosed program card.

The button above is for adding extras such as nuts, which should not be in the dough from the start. This setting should be the last one to be made, as it can be adjusted if you change the brightness of the bread or the weight. To the left of the display are the settings for this, as well as the start button. This allows you to set a timer that starts the machine when the time is up.

Each of the programs allows small adjustments to the bread recipe.

To the right of the display there are quick start buttons as well as the individual program and the start and stop button on the right. With this button the process can be started, paused or cancelled.

Each time a button is pressed, a beep sounds. Unfortunately this cannot be switched off manually.

With the bread maker, you can not only prepare different types of bread but also cakes, dough, and jam.

With the timer function, some programs can be delayed up to 13 hours, so that the freshly baked bread can be ready at 7 a.m. for example, if the ingredients were added at 6 p.m. the previous day and the timer was set to 13 hours.

The memory function allows you to stop the baking process for up to 10 minutes (e.g. in the event of a power failure) without having to restart the machine. The process is simply continued. When the program is finished, the beep sound appears 10 times and the warming function switches on automatically for 60 minutes immediately after baking. This can be stopped by pressing the stop button for a long time.

During baking and resting, the machine is soundless. During stirring its noise level is approx. 55 dB and is not disturbing.

During the empty 10-minute baking function the case heats up to approx. 40°C and during the baking process with dough the case heats up to almost 50°C. So you should be a bit careful there. Also, the baking pan and the handle get hot, here you should use oven cloths to protect yourself from burns.

Result

The result of the farmer's bread baking mixture turned out evenly browned in our test in medium mode. The duration was 2:53 hours. The dough was well kneaded, had rest periods and rose well. The bread tastes very good and can be easily removed from the mould. The dough hook is very firm in the mould and does not stay in the bread.

The pizza dough is also well done. All ingredients were kneaded to a smooth dough within 1:30 hours. Also the pizza dough has risen well. While the dough is in the machine, it is kneaded and rest periods are also included.

Cleaning

The baking tin and the dough hook are unfortunately not dishwasher safe. Only the measuring cup, spoon and dough hook may be put in the dishwasher. The baking tin is relatively easy to clean, as the bread and also the dough is completely dissolved. Abrasive and harsh cleaning agents should be avoided in order not to damage the non-stick coating. Some force is required to remove the dough hook. It is best to rinse out the container roughly.

Appearance

The medium-sized device looks simple and of high quality. The unit may need to be wiped more often to remove fingerprints on the stainless steel surface.

The size of the display is also sufficient. While operating the display, it glows blue. After a few seconds without operation, the light switches off. The viewing window could be larger and there is no interior lighting. It's easier to lift the lid, for which two small levers are attached to the lid.

  • 2 tsp very soft butter*
  • 1/2 tsp salt
  • 1 tablespoon honey*

Tip: For a savoury alternative, use 1/2 teaspoon sugar instead of honey and fill the ingredient container with chopped onions and small cubes of ham*.

Size: 700 g; Browning: Dark

Classic White Bread

  • 300 ml lukewarm water
  • 40 g soft butter*
  • 450 g wheat flour type 405
  • 1/2 pack dry yeast
  • 1 tablespoon of salt
  • 1 teaspoon sugar

Tip: Wheat flour breads are usually voluminously, so do not use more than about 750 g of total ingredients. For even more browning choose the 900 g mode.

Zucchini Spelt Bread

  • 350 ml buttermilk *
  • 40 g soft butter *
  • 500 g spelt flour type 630
  • 150 g rasped zucchini
  • 1 pack dry yeast
  • 1 tablespoon of salt
  • 1 teaspoon sugar
  • 1 teaspoon herbs of Provence
  • 50 g chopped walnuts

Tip: Pour the walnuts into the ingredient container.

Size: 900 g; Browning: Dark

Italian Farmhouse Bread

  • 400 ml lukewarm water
  • 400 g spelt flour type 630
  • 1 package dry yeast
  • 1 tsp salt
  • 1 teaspoon oregano
  • 1 tsp dried basil
  • a pinch of sugar
  • 50 g pine nuts
  • 40 g sesame seeds

Tip: Pour the pine nuts into the ingredient container.

Browning: Medium

Sponge Cake with Nuts

  • 150 g liquid butter*
  • 250 g wheat flour type 405
  • 150 g sugar
  • 3 eggs size M *
  • 1 package baking powder
  • 40 g chopped almonds
  • 40 g chopped hazelnuts

Tip: Place the almonds or hazelnuts in the ingredient container.

# 7 "Knead Dough"

Add ingredients for doughs that require a rise time, e.g. yeast doughs and gluten-free doughs.
Tip: In the rising phase the temperature is about 32 °C.

# 8 "Baking"

In this mode, you can use ready-made doughs (e.g. cake, bread etc.) and bake them as desired.
Tip: The maximum temperature at "dark" level is about 175 °C in the baking pan.

# 9 "Toast"

Size: 700 g; Browning: Medium or dark

Honey Toast

  • 300 ml lukewarm water
  • 40 g soft butter*
  • 425 g wheat flour type 405
  • 1 package dry yeast
  • 3 tbsp honey or agave syrup
  • 1 tsp salt

Tip: Wheat flour breads are usually voluminously. Therefore, do not use more than 750 g of total ingredients. For even more browning choose the 900 g mode.

Max. approx. 1,500 g

Berry Jam

  • 100 ml apple juice
  • 400 g roughly pureed blackberries
  • 400 g roughly pureed currants
  • 500 g jam sugar (2:1)

Tip: For a less acidic alternative use raspberries instead of currants. Important: Shelf life is about 2 weeks.

Mix ingredients for all kinds of doughs and sweets.
Tip: There is no active heating.

# 12 „Gluten-Free”

Size: 700 g; Browning: Dark

Protein Bread

  • 250 g quark *
  • 4 eggs (size M) *
  • 75 g ground linseed

Tip: Let the bread rest for about 2 - 4 hours before slicing. Storage in the refrigerator is recommended. Alternatively, it is also possible to double the quantity. In this case, however, let the bread rest for about 2 - 4 hours after keeping it warm.

You can also make the other recipes gluten-free, for example by using buckwheat flour instead of wheat flour as well as gluten-free baking powder and yeast.


*For Vegan and Vegetarian Versions:

Instead of ham -> use smoked tofu
Instead of butter -> use plant-based butter or margarine-like vegetable cream
Instead of buttermilk -> use rather liquid, plant-based, natural yoghurt
Instead of quark -> use plant-based quark or skyr
Instead of honey -> use agave or maple syrup
Instead of eggs -> use an egg substitute powder or 1 linseed ‘egg’ (mix: 1 tablespoon or 6g finely ground linseed + 3 tablespoons or 45 ml water and place it in the fridge for at least 15min)

I bought this model of bread maker by one of my friend who lives in Germany and I have it now but I can not understand douch I live in Iran and need to know the magers in English. I couldn't find any sites, so could you help me? For example, it is written 1/2 pack of yeast, but I don't know how many teaspoons are in 1 pack in Germany. So, help me please.

Unfortunately, the Rommelsbacher recipes are not available in English, but you will find plenty of recipes online. 1 packet of yeast is about 7g, so approx. 2 ¼ teaspoons.

You can find the instruction manual as a pdf file online at the website of Rommelsbacher. Unfortunately, only the German version includes some recipes but there are several recipes for bread available online.

Hi, I used both programs “3” (white bread) & “9” (toast) but for both times the bread didn’t rise enough, and it seems 3/4 baked. I used 3 cups of bread flour, 1 tbsp butter, 1 & 3/4 cup warm milk, 2 tbsp sugar, pinch of salt and 1.5 tsp I instant yeast. Should I use warm milk or water? And is it true the yeast should not touch the warm milk or water? Thanks

Yes, yeast reacts very sensitively to heat or warm water. There can be many different reasons why your bread didn’t rise enough. Instead of using cups as a measurement, it might be better to use a scale to measure the grams. You might also check again whether the yeast was too old, as it is important that it is still fresh and “active”. It can also be helpful to pour in the liquid ingredients first and afterwards the dry ones. If it is still too wet, the water-flour-ratio might be wrong. Many basic bread recipes work with 350ml, so you could consider adding a little less liquid.

If the program allows that additional ingredients such as nuts can be added to the dough, then the device triggers a mechanism by itself and the flap of the container falls away downwards. Not all programs have this function.
