  • Prepare jam
    We strongly advise against cooking jam in a BBA. After cooking, the fruits are distributed throughout the appliance. Therefore you have to scrub for a long time to get the BBA clean (if it works at all). In addition, this can damage the heating elements. Our tip: Use the good old pot for jam.

  • Temperature of ingredients
    For the ingredients to react best with each other, all ingredients should have the same temperature (e.g. room temperature).
  • Note the order
    First mix the liquid ingredients (water, oil, eggs) and then add the dry ingredients (flour, dry yeast). This ensures that the dry yeast does not come into contact with the other ingredients too early, thus delaying the fermentation process.
  • Get rid of the hole in the bottom of the bread
    The dough hooks of every bread maker leave an unattractive hole in the bottom of the bread. You can simply remove the dough hook before baking. Ideally, the manual of the appliance will tell you when the baking process starts. 10-20 minutes before baking you should remove the dough hook. Make sure that the dough hook no longer rotates. Dust your fingers with some flour, grab into the dough or lift the dough - depending on consistency - also briefly and remove the dough hook.
  • Keep lid closed during baking
    When opening, cold air enters the vending machine and may impair the baking process. Leave the lid on. Patience pays off.
  • Getting bread out of the baking tin
    If the bread cannot be released from the baking tin, you can help by turning the tin and turning the driveshaft slightly back and forth at the bottom of the tin. ATTENTION: The driveshaft is hot after baking and should only be touched with a potholder or dish towel. Afterwards, you should shake the mould slightly upside down.
  • Slicing bread
    Let the bread cool before you cut it. The freshly baked bread is usually very soft and therefore difficult to cut. The best way to cut it is with a bread knife.

In the run-up to the test, we defined practical requirements and the following test criteria:

In order to be able to evaluate these criteria, we have defined several tests for the bread machines. In these all devices must bake farmhouse bread and pizza dough.

Before baking with the machines, the filling quantity of the baking tin is measured by filling it with water and weighing it.

In the first test series, the bread is baked. For this purpose, a baking mixture is prepared, which is then placed in the vending machines according to the manufacturer's instructions. Depending on the appliance, a basic program is selected for baking.

The crust/colour of the bread is set to "Medium". After the bread is ready, the result is documented with photos. In order to maintain objectivity, the bread is sampled by several test persons.

The pizza dough is then prepared and placed in the machine according to the manufacturer's instructions. Depending on the machine, either the dough program or the pizza dough program is selected.

This result is also documented and eaten by several test persons. During both baking processes, the baking time and the temperature of the devices are measured.

Farmer's bread and pizza dough are prepared in the tests.

In addition, the handling and operation of the bread baking machines are evaluated. Additional functions such as timers, warm-keeping functions or various programs are also extensively checked and tested. Finally, the cleaning of the vending machines is evaluated.

In order to rule out errors and to ensure the load of everyday use, each test takes place in several rounds.

The test criteria are given percentages depending on their importance. The final score is then objectively calculated from the test criteria using an algorithm.

Product selection

Our product selection is based on observation of the current market. In addition to popular branded products, we also include insider tips in our selection. Criteria such as price and range of functions are an important factor for us. The test field is also determined by analysis and evaluation of customer reviews and external tests (e.g. Stiftung Warentest).

The devices are purchased anonymously or lent to us by the manufacturer. Dealers and manufacturers have no influence on the tests and our evaluation.

As soon as new relevant products come onto the market, our test field is extended by these. The new products go through the same test as the already tested devices.

We have thoroughly tested seven bread makers and tested their operation, functionality and baking results. Below you will find a summary of the test results.

Test winner: The Aicok bread maker with 19 programs

The Aicok bread maker is the clear winner of our test. This model convinces above all by its uncomplicated handling, an appealing design, an above-average timer function and an extensive selection of programs.
With a filling capacity of 2.5 l, breads of up to 1000 g can be prepared. The appliance is also suitable for the production of cakes, doughs, and jams.
19 programs, 3 degrees of browning as well as the timer, memory and warming functions allow you a flexible and individually adaptable use of the bread maker.
The Aicok breadmaker also stands out from the other models' tested thanks to additional extras such as a viewing window and the integrated ingredient dispenser. Due to its practical shape, the Aicok Breadmaker can be stored in a very space-saving way.
Although the control panel is exclusively in English, the control of the device is relatively easy to understand and can be quickly internalised.

The Aicok breadmaker works reliably and delivered extremely positive results in the test. Pizza dough is sufficiently kneaded and its volume increased, bread gets a good consistency and a light crust after a baking phase of about three hours.

WMF Kult X Bread maker

The WMF Kult X bread maker has a handy size and is relatively easy to operate. This model also looks very high quality due to its stainless steel surface. The appliance has 12 different programs and 3 browning levels. It is well suited for the preparation of smaller loaves of bread weighing up to 750 g.
In the test, the WMF Kult X bread baking machine showed good results overall. Both bread and pizza dough arrive effortlessly and within a reasonable period of time, but a dark bread crust was only reached at the highest browning level.

Russell Hobbs Bread maker Classics

In terms of functionality, handling and baking result, this model can certainly keep up with the other baking ovens. Within 3.25 hours, the machine prepared a good bread with a browned crust during the test. The pizza dough was thoroughly kneaded and opened as desired.
However, the workmanship of the machine is poor. The lid cannot be closed properly, the Russell Hobbs Classics bread maker looks cheap and inferior overall. The lack of accessories is also negative.

Severin bread maker BM 3990

The Severin BM 3990 bread maker can comfortably produce medium and large loaves of bread thanks to its 3.3 l capacity. The appliance is easy to operate, with 12 programmes and 3 browning levels, a timer and a memory and warming option, the model's range of functions corresponds to the average.
Bread gets a lightly browned crust, even pizza dough succeeds well.
The poor recognizability of the images on the device's buttons proves to be unfavorable. The Severin BM 3990 bread maker also has neither interior lighting nor a pause button.

Clatronic BBA 3505 bread maker

The Clatronic BBA 3505 bread maker is extremely easy to use and successfully prepares both bread and pizza dough in a reasonable time. During the three-hour baking phase, the machine produces an attractive crust of bread. The machine has 12 programmes and a capacity of 3.3 litres. With the Clatronic BBA 3505, you can set a timer or stop the baking process for 15 minutes using the memory function.
The design of this model is very simple, the optics give a rather cheap impression. Interior lighting and pause button are missing.

Panasonic bread maker SD-ZB2512

The operation of the Panasonic SD-ZB2512 bread maker is uncomplicated and user-friendly. The machine is characterised above all by its variety of programs and a very high-quality appearance. The capacity of the machine is 3.3 l. A yeast distributor and an ingredient dispenser are available as accessories. There is no viewing window.
The dispenser is relatively heavy and large, and this model also requires a relatively long time to prepare bread (4 hours). However, the Panasonic bread maker makes pizza dough faster than the other machines tested.

Unold bread maker baker Onyx

The Unold bread maker 'Backmeister Onyx' is the only model that allows you to set your own program. It has a window and a capacity of 2.4 litres.
In the test the device delivered excellent results, both bread and pizza dough succeed in the Unold baking automat well.
However, the operation is rather difficult and the menu is not easy to understand. Objects on the display are difficult to recognize due to their small size. You don't need interior lighting or a pause button on this model. The design of the appliance is also unfavourable, the baking machine looks cheap and inferior.

Jam in the bread machine? That may sound strange at first. In fact, most bread makers have a separate jam menu. The function seems convenient because all the ingredients can simply be put into the machine and half the work is done (at least this should be assumed). There are no limits to creativity and a wide variety of jam creations can be created.

We tried the function and cooked a blueberry jam.

Preparation

The ingredients are simply added to the bread maker and the Jam menu is selected. Then you have to wait, because the cooking process usually takes over an hour.

After long and patient waiting we have cooked a delicious jam, but we would not recommend the function at all. The fruit boils over and contaminates the whole machine. The jam is on the viewing window, runs down the outside of the baking tin, burns on the heating spiral and inside the baking automat. It took us about an hour to get the machine clean again.

Conclusion

In our opinion, it makes little sense to cook the jam in the BBA.

  • The preparation takes much longer than in a pot.
  • In addition, the duration of the process results in an increased loss of vitamins. The fruits should actually be boiled down for 3-4 minutes. In vending machines, the process usually takes over an hour.
  • Cleaning a cooking pot is much easier than cleaning a whole bread machine.

It is also very unfortunate that we did not get the baking tin clean again. After several attempts with the most different cleaning and household means the discoloration remains, in order to remind us of the disaster. Hence our recommendation: Stay with the good old cooking pot when it comes to cooking jam. This will save you a lot of time, trouble and vitamin loss.

A big advantage of why it is worth baking your own bread is that you can decide for yourself which ingredients you want to contain and which you want to avoid. Industrially produced breads use preservatives, flavour enhancers, and other additives.

Even bakers often use baking mixes. This serves to facilitate work processes and also to ensure that the quality of the bread remains the same. Traditional bakers who still bake their bread completely themselves are rare.

With a bread maker, you can do it without additives. For a long time now there has been a trend towards Germans paying more and more attention to their health and not wanting food with additives. You can also increase the nutritional value of bread in this way.

Every German consumes an average of 70 kilograms of bread per year. A slice of mixed rye bread requires between 45 and 50 grains to be ground. Grains are the raw material for bread, but in their unprocessed state, they are not suitable for baking.

Flour is only produced by grinding. This was very laborious for our ancestors, which should change in the course of the time, however. But as is so often the case, this invention had something to do with chance. An experimental baker had brought the sourdough to life.

But let's go back once again to the Egyptians, for whom bread played an important role: Not only that they liked to eat a lot of bread, the dead were given it as a burial gift. The first tools of the Egyptians were simple rubbing stones. It was physically very strenuous to grind the hard grains with them. The preparation of two kilograms of flour took almost ten hours.

When the Israelites left Egypt, baking also reached the Greeks. Soon it was also widespread among the Romans, who more than 2000 years ago developed turning mills made of stone. This made the grinding of the grains much easier since the rotary motion of the mills required less effort. Grinding also took less time. Around 400 A.D. there were already more than 250 bakeries in Rome, some of them also large enterprises.

It was not long before baking began its triumphal march in Europe as well. Around 150 years ago, a significant development in mill technology took place in Switzerland: a roller mill was built. Two metal rollers rotate in opposite directions.

The heat development is low, so that the minerals in the flour, such as iron, calcium, and magnesium, are retained. This made bread an important part of a healthy and balanced diet. Dietary fibre is good for digestion and carbohydrates provide the body with energy. Afterwards, the break-through succeeded to a modern grain processing.

You don't have to be a professional baker to bake your own bread. The bread maker is also suitable for beginners. No previous baking knowledge is required. You will find numerous recipes on the Internet or in cookbooks and baking books, which you can easily re-bake.
