  • You can tell from the lid test whether the boiling down process worked by lifting the glass up on the lid. If the lid doesn't fit tightly, the boiling process didn't work!
  • You can tell if the food in the jars is spoiled by the fact that the lid is still firmly on. If the lid is loose, the soup is spoiled. With twist-off jars (lids with screw caps), you can tell by the bulging of the lid.
  • Cooked or hot stuffed food must be stored in a cool, dark and dry place. You should check the glasses regularly to make sure that they are still tightly closed.
  • Be sure to use only ripe fruit and vegetables for preserving, as this is the only way to preserve the full flavour of the fruit perfectly. Before chopping, only wash the fruit briefly to preserve the flavours. Hard vegetables such as kohlrabi or carrots can be blanched in saltwater before bottling to give them a pleasantly soft consistency later on.

An automatic cooker is a large pot made of stainless steel or enamelled sheet steel, with a volume of approximately 25 to 30 litres. The automatic preserving machine, also known as a boiling pot, preserving apparatus or simply preserving pot, is primarily used for preserving food that is filled into special jars. Like any other cooking pot, a preserving pot has a lid and two side handles. The special feature of an automatic cooker is an insert on which the jars are placed to be cooked.

The frame allows several glasses to be cooked at the same time and prevents the lower glasses from coming into direct contact with the bottom of the pot. The indirect heating of the jars via the water in the pot prevents the jars on the underside from being heated too quickly and shattering. Instead of a large frame, metal or heat-resistant plastic shelves can also be used on various automatic cookers to stack the glasses during cooking and protect them from uneven heating.

The preservation of food with an automatic preserving machine is based on the principle of sterilisation by heat. This principle is also used in the industrial production of preserves in jars and cans. Automatic cookers are basically large cooking pots in which food is cooked until all germs have been killed.

For this purpose, the food - ready-prepared meals, meat, jam, fresh fruit or vegetables - is filled into thick-walled jars, the so-called alarm clock jars. The jars are closed with a glass lid. A rubber ring between the lid and the glass ensures that the jars remain tightly sealed after boiling down.

For boiling down, some water is poured into the automatic preserving machine, the jars are placed in the pot on a rack or a rack and the automatic preserving machine is closed with a lid. Depending on the model, the automatic preserving machine is then heated on the stove or with a single-skinned electric heater and the contents are cooked in the jars.

The strong heat kills germs. At the same time, the heat expands the contents and the rest of the air in the jars and some of the air is pressed out of the jars. The rubber ring between the lid and the glass prevents air from flowing into the glass again. This creates a negative pressure in the glass, which holds the lid firmly on the glass. With a perfect sealing rubber, the glasses remain absolutely tight for many years. The glass lids are secured with a metal clip on the glass during the boiling process so that they cannot lift off completely.

The clamp is basically a spring. The lid can take off a little and the air can escape from the glass when it is boiling down. When cooling, the spring clamps the lid firmly onto the glass so that no air can flow back into the glass and prevent negative pressure.

The process of preserving food by boiling it down was patented by chemist Dr Rudolf Rempel in 1892 and is still called "Einwecken" today. Johann Carl Weck bought this patent a few years later and is the inventor of glasses with rubber seals and grooves in the edge of the glass, which still bears his name today - preserving jars.

Depending on the equipment, you can use an automatic cooker for different tasks. This includes:

  • Juicing of fresh fruit and fruits
  • Heating and keeping warm beverages, soups and sauces

The original purpose of automatic cookers is the cooking of food. With a preserving machine, you can preserve prepared meals, meat, soups, sauces, fruit and vegetables for a long time. You can equip various devices with a juicer insert to gently juice fresh fruit with steam. With some devices you can, for example, prepare mulled wine and then keep it warm. You can also keep soups or tea warm for a long time in an automatic preserving machine. The vending machine should have temperature control that is as accurate as possible and a built-in electric heater. Automatic cookers with built-in heating can be used independently of the stove wherever there is a power supply nearby.

There are repeated reports of cooked foods that have been kept for 50, 60 or even more years in a jar somewhere in a cellar shelf. Although these long-term preserves are often still edible, they usually do not look and taste appetizing anymore. How long the food cooked with an automatic preserving machine remains in a good and edible condition depends on various factors.

First of all, the cooking time must be long enough to really kill all germs. Glasses, lids and sealing rings must also be sterile. Then the lid must be closed tightly and the rubber ring must be in order. The more sugar a can contains, the longer it usually lasts. For example, jams and marmalades with at least 50% sugar. Various foods and some fruits and vegetables do not last very long if they have not been processed before they are cooked. Churches, for example, become pale in the course of two or three years and lose their bite. After that, you can still eat them, but they are no longer beautiful.

You should always store food that has been preserved with an automatic preserving machine in a dark and dry place so that it lasts for a long time. Mould, a musty smell or a strange, sometimes acrid taste are a sure sign that the jar is spoiled and no longer edible.

Tip: It can always happen that the glass contents start to get mouldy after just a few months. Then you should dispose of the contents and not eat them anymore. You can no longer use the rubber ring. You can reuse the glass and lid if you boil them for 10 to 15 minutes or disinfect them thoroughly with alcohol and rinse them afterwards.

When buying an automatic cooker, you should pay attention to a few points so that you can choose the right cooking pot for your needs.

First of all, you should consider what you want to use the pot for in the first place. This will determine the equipment and function of the automatic cooker. In principle, a simple cooking pot, which you can place on the stove or in the oven to heat up, is sufficient for cooking food. More practical and flexible, however, is a preserving pot with built-in heating.

If you want to juice fruit and vegetables with the automatic cooker, the pot should be equipped with a juicer insert and a drain cock. Alternatively, you can also buy special steam juicers for the stove. However, these juicers can usually only be used for juicing and not for boiling down.

You should make sure that a thermometer is included in the scope of delivery of the boiling machine. You can use the thermometer to check the temperature in the pot and correct it if necessary. Automatic cookers with a built-in thermometer and integrated temperature control are practical if, for example, you just want to keep soups or drinks warm.

If you do not want to cook your food unnecessarily long, then you should make sure that the automatic cooker is equipped with a timer. The timer switches off the pot heater at the end of the optimal cooking time without you having to keep an eye on the time.

Last but not least, you should pay attention to the processing quality of the automatic cooker. Both enamelled and stainless steel pots should be perfect and fit perfectly. High-quality pots from renowned manufacturers are often somewhat more expensive, but very robust and sometimes last a lifetime.

You need jars, sealing rubbers and clamps to cook food with an automatic preserving machine. The jars are available in many different sizes and shapes in specialist shops or on the Internet. When buying, make sure that the sealing rubbers have the correct diameter. The clamps must also match the diameter of the lid.

Tip: The sealing rubbers become hard and brittle over time. A hard sealing rubber cannot adapt optimally to the edge of the glass and the lid and close the glass securely. Check each rubber before putting it on and pull it apart a bit. If it feels hard to the touch or if small cracks appear when you pull it apart, you should use a new sealing rubber.
